Phaleonopsis
Have a plant that bloomed for a year almost, and when blooms dropped, I cut back the 2 stems to a knob, and about 6 morestems grew and it has been blooming another 6 months. So when blooms dropped again I pruned carefully and this time 2 leaves have sprouted. Not sure what to do with them, how do I cut off from the stem and attempt to root them?

I assume you mean that two leaves appeared on the stem. That's a new little plant called a "keikei." Once it starts to send roots downward, you can cut it off to plant it on its own. Just cut about 1/2" below where it comes out of the stem and stick in it a small pot with a mix that's for phals. Make sure the roots are at least 1" long, preferably a little longer. Keep the new pot in a place that doesn't get direct light and it get a lightly dry before watering each time. It'll be an exact duplicate of your original. The old stem probably won't bloom again. Getting a second flush of blooms AND a kei-kei is a real boon. Just in case, leave what's left of the old stem (if there's still a node left on it) till it dies. There's always the possibility that you may get another flush of blooms. Whatever you're doing, you're doing it right.

Jeana, thank you so much, I am so excited!! I'll be in looking and measuring every day. This plant was a 7.98 plant at home depot. amazing!!

Sometimes the original stalk will bloom again, while there's a keikei attached. You apparently picked a good one, and a bargain to boot!

Jeana, been a while since you (post #15633, reply #4 of 4)
Jeana, been a while since you gave me info on my phal. just found your reply. The 2 leaves are growing, the roots are almost an inch long, not quite., before the roots appeared a stem started to sprout from the new leaves........ also a new stem is growing from the old roots.
I'm afraid to make a cut, the roots, new stem and leaves are so close together.
Any suggestions?
