bitter carrots
In spite of the carrot variety we plant, Sweetness II, etc, often many of our late fall/early winter dug carrots have a bitter taste. Some have been in storage less than a month, some for a couple months at this point. Anyone have any thoughts on the cause?
We rarely use any inorganic fertilizer, generally have a couple inches of leaf mulch on top of the garden to control weeds and moisture.

There are all kinds of carrots, look more closely at the info on seed packets for flavor, time to plant and when to harvest. Some are fast growing and sweet, some are shorter carrots, others are slow growing and get quite large - great for carrot cake ;-)
This time of year carrots will have lost most of their sweetness and are getting woody.
