How do I head these back to keep them from being so leggy and sprawling? They can barely hold the weight of their own blooms

Pruning Rhododendrons is remarkably easy, although a bit daunting. Although this article talks about maintenance pruning to remove the spent blossoms I have found that unnecessary as have many others around here with far more Rhododenrons then I have. http://www.finegardening.com/how-to/articles/three-ways-prune-rhododendrons.aspx?nterms=74872
