Need suggestions for 80' long slope (post #18616)

We are building our retirement home in Eastern Tennessee, zone 7. We just had an 80 foot long retaining wall installed (see photos) to hold back a 15 to 20 foot tall slope of mainly rocks. The rocks are anywhere from the size of baskeballs down to perhaps the size of baseballs. At our age, we do not want to mow or weed wack the slope. What can we plant to fill in the slope quickly and choke out weeds? Thanks for any help.
