Hello! Does anyone know what zone 3 evergreen is most similar to Italian Cypress? I am looking for a narrow columnar evergreen that is very tall. It would also be wonderful if it grew quickly. Thank you!

That's a tough one. The Pyramidal Arborvitae MIGHT work. Check out Thuja occidentalis 'Pyramidalis' at this website. It says the species is hardy to zone 3. I guess a drive around your area would give you a better idea if that's accurate.
